Yakult Granita

Yakult is a very popular beverage among the Asian community. Whether it’s as a snack or to add on to a meal. The tangy sweet flavor awakes the palate and by making it into a granita, it is also very refreshing. I love having a batch made and can scoop some into a small cup whenever I need a quick dessert. It also works as a refresher before a heavier course. This recipe is not only simple and delicious but Yakult is filled with probiotics, too! Taste good and does good for the body!

 
 
 

Yakult granita

Prep time: 10 minutes | Total time: 2 hours 10 minutes

Yields: 3 cups

Ingredients:

1 3/4 cup Yakult, from 5 2.7-each bottle*

1 lemon, finely zested

Instructions:

  1. Pour the Yakult into a 6.5 x 9 x 2-inch deep metal pan** and carefully place the dish on a level surface in your freezer. Freeze for 1 hour. Remove from the freezer and use two forks to rake the mixture. Place back into the freezer and repeat this process every 30 minutes until the mixture is firm and granular, similar to a shaved ice texture. When ready to serve, rake into a small bowl and garnish with lemon zest. Enjoy immediately.

*What is Yakult?
Yakult is a Japanese sweetened probiotic milk beverage fermented with the bacteria strain Lactobacillus paracasei Shirota. There are two versions, one with sugar (red packaging) and one with less sugar (blue packaging). 1 small bottle yields 2.7-ounce each.

** Help! I do not own an 6.5 x 9 x 2-inch deep metal pan. What can I do?
No worries! Just use a small metal or glass baking dish. The larger the pan, the shorter the freeze times. If you are using a 9 x 13 baking dish, cut the freezer times in half.
